Fermented spontaneously with wild yeasts and aged briefly on the fine lees without forced stabilization, this straw-yellow bianco offers aromas of hay, wildflowers, and field herbs alongside ripe orchard fruit, framed by a mineral, saline finish. Unfiltered and made with minimal intervention, each bottle reflects the rhythm of the monastic year — the 2024 vintage yielded a limited 20,400 bottles after an unusual growing season of early heat and heavy autumn rain.
