The flagship "orange wine" of the Cistercian Trappist Sisters of Vitorchiano, Coenobium Ruscum takes the monastery's signature Trebbiano, Malvasia, and Verdicchio blend through 15 days of skin maceration, deepening its color to a rich amber-gold and building remarkable texture and complexity. Grown organically on volcanic soil within the monastery's cloistered vineyards and fermented naturally with indigenous yeasts, this rustic yet elegant white shows layered notes of wild flowers, sage and mint, hay, ripe pear and baked apple, with a whisper of orange peel. On the palate it's broad, savory, and gently tannic, finishing with a fresh saline lift reminiscent of sea air. Bottled without forced stabilization, this small-production natural wine is a benchmark of Lazio's volcanic terroir. Best served at 14–15°C. 750ml.
