Coenobium Lazio Bianco 2024

A rare and soulful white wine handcrafted by the Trappist Sisters of the Monastero Suore Cistercensi in Vitorchiano, Lazio. Made from a co-fermented blend of Trebbiano (45%), Malvasia del Lazio (35%), and Verdicchio (20%), grown organically on the monastery's own volcanic peperino soils without synthetic treatments. Fermented spontaneously with wild yeasts and aged briefly on the fine lees without forced stabilization, this straw-yellow bianco offers aromas of hay, wildflowers, and field herbs alongside ripe orchard fruit, framed by a mineral, saline finish. Unfiltered and made with minimal intervention, each bottle reflects the rhythm of the monastic year — the 2024 vintage yielded a limited 20,400 bottles after an unusual growing season of early heat and heavy autumn rain.
