Pascal Cotat's Chavignol Rosé is a small act of beautiful defiance. Grown on 80-year-old Pinot Noir vines in a tiny limestone plot within Sancerre — declassified to Vin de France after a local bureaucratic dispute — it became more coveted for being unbothered by the rules. Direct-pressed, fermented with indigenous yeasts in ancient demi-muids, bottled unfined and unfiltered. Citrus zest, summer berries, crushed chalk, and light herbs build to a dry, textured, mineral finish. A rosé for people who think they don't drink rosé.
