“Earth & Sky” is Apostolos Thymiopoulos’ cult Xinomavro – a benchmark Naoussa red that manages to feel both grounded and weightless at the same time. Sourced from organically farmed, old‑vine parcels around the villages of Trilofos and Fytia, this is the wine that made the world pay attention to northern Greece’s most important red grape.
Think Nebbiolo meets high‑altitude Mediterranean: wild strawberries, sour cherry and pomegranate, woven with rose, dried herbs, tomato leaf, olive tapenade, spice and a gentle earthy undergrowth. On the palate, it’s medium‑plus in body but high in acidity and fine, architectural tannin – structured yet graceful, with a long, savoury finish that begs for food and cellar time.
Fermented naturally and aged in older oak, “Earth & Sky” is more about perfume and texture than flashy new wood. It drinks beautifully now with a decant, but it’s also built to age, gaining even more complexity over 5–10 years.
